How the “Cooking at Casey’s” Show Began

Great food is one of the pleasures of life, maybe even more so since COVID-19 began to restrict our daily lives. At Casey’s Pond, Chef Erin Hamilton and registered dietician Kat Ciamaichelo, provide culinary creations packed with flavor and nutrition, and are going the extra mile to help residents reach a higher level of wellness—even in these pandemic times.

summer berry vinaigretteBefore COVID, the dining and culinary team introduced the “Superfood of the Month” program featuring recipes with highly nutritious foods like carrots, berries, melons and avocados. Residents enjoyed the variety and creativity of these offerings, along with the fantastic health benefits. After the pandemic hit, the team put their heads together and came up with the “Cooking at Casey’s” show which gives residents, family members and members of the larger Steamboat Springs community the opportunity to watch Erin and Kat give step-by-step instructions for preparing these fabulous super-food infused recipes.

Whether the featured recipe is a colorful salad with berry vinaigrette or a savory avocado and egg dish, Chef Erin and Kat provide easy-to-follow steps along with informational tidbits, such as the history of the avocado. In Episode 3, Kat demonstrates outside in the warm mountain sunshine with an occasional butterfly swooping into view. It’s a feast for the eyes as well as the mouth!
